Are they near London, UK, or near Cork/Waterford, Ireland? Perhaps they’d get value from an in-person meeting with an experienced book editor, to chat about their project or next steps?
They can also incorporate your gift as part of the booking fee for one of my other editing or coaching services, if that’s how they’d prefer to use it.
The voucher can be emailed directly to the recipient at checkout, or you can email it to yourself and pass this to the recipient.

I’m very happy to accept work from clients who live outside the UK. In order to ensure the payment received matches the fee exactly, I recommend using my Wise business account. (Wise is typically cheaper than traditional banks, especially for international transfers, and it’s a very transparent service.)
